I am a former chef and have done alot of German cooking and while the first person is right it can be called “Roulade’ or “Rouladen”, both mean basically the same, I however do use pickles, it is a regional thing. It is like the Italian dish Brasola, you pound a cut like round or eye of the round into a cutlet shape, I also use some ground beef mixed with onions and spices, add a dollop on to the cutlet, and then add a baton of ham, swiss cheese, carrot that has been blanched, you rub the mustard on the cutlet before adding the garnishes, even some parsley is nice just a sprig. Roll it like a cabbage roll, I use toothpicks to hold them but they can be tied with string, brown them in a pan or roaster, take them out and deglaze the pan with wine or stock your called add a bit of tomatos paste/tomato sauce (hunts) and a gravy of sorts, 2 cans of Franco-American or homemade is fine, lay the rouladen back in, and bake cover for 1 1/2 to 2 hours until tender. Serve with Spatzeli, braised red
