What is garam masala?
garam means "hot" & masala means " mixture" is a blend of ground species common in south india and other southern asian countries. it is used alone or with other seasonings . the word garam masala refers to intensity of the species rather than capsaicin content.
it is pungent , but not hot in the same way as a chilli pepper.
For the garam masala:
- 2 crushed cinnamon (not cassia) sticks.
- 3 crushed Indian bay leaves (or substitute bay laurel)
- 1 tablespoon fennel seeds.
- 1 tablespoon green cardamom pods.
- 1 tablespoon black peppercorns.
- 2 teaspoons coriander seeds.
- 1 teaspoon whole cloves.
- 1 teaspoon ground mace or nutmeg.
its a mixture of many spices and hence found in crushed form.
Though the word “garam” means “hot”. So in India its also refers as something HOT(with a pun) too. HOT SPICE 😉
