What is Emmental?
Emmental is one of the models for what is known as Swiss Cheese in the U.S. A pale yellow, nutty-tasting cow’s milk cheese, Emmental is riddled with trademark holes and appreciated for its excellent melting quality. Also known as Emmentaler or Emmenthaler, the cheese is named after the Swiss Emme valley from which it originates. (The river valley is called the “Emmental.”) The original Emmental cheese was registered with an AOC designation in 2006; Emmentaler Switzerland AOC is made with raw milk and is aged for up to 14 months.
