Paula K., Witchita, KS Chiffonade is a verb which means to finely slice or shred leafy vegetables or herbs. It is a slicing technique. To chiffonade basil, stack several leaves, roll like a cigar and starting from the pointed end cut the “cigar” into 1/8 inch slices. The pros can slice them even thinner. Chiffonades can be used to garnish soups, meats, fish, etc.
