Bitterroot grows in the mountains of western North America. Native American tribes often boiled the plant’s thick starchy root for food after removing its bitter bark. A low-growing succulent plant, it has white or rose-colored flowers on short stalks. The plant has the generic name Lewisia in honor of Meriwether Lewis of the Lewis and Clark expedition, who collected specimens of it.
