In my experience, swordfish is easiest to stuff because it holds together better than flakier fish. It’s firm, similar to the consistency of meat. I took at 1 inch thick swordfish steak, sliced a pocket into the side, and stuffed it with a crabmeat filling. Then I grilled on a BBQ. I’ve bought frozen salmon fillets that wrapped in a bowl shape and stuffing placed in the middle as well.
