What is beef consomme and where can I find it in my local grocery store?
Real consomme’ is a beef stock made with bones, flavoring vegetables, possibly herbs and an acidifier so that the broth will gel when cooled. It’s cooked down so that it’s concentrated, and then strained to clarify it. It’s actually pretty simple to make. Real consomme’ would be hard to find in a grocery store. Campbell makes a product it calls consumme’, which is more like a strongly-flavored broth. I have also seen consomme’ in international stores in the U.K. and Canadian aisles, but interestingly enough not in the French. I think this is it is so basic to French cooking and such an easy way to use the bones from meat that you’ve deboned, and so distinctive-tasting most would not dream of spending money on an inferior product in a store. http://us.st12.yimg.com/us.st.yimg.com/I/foodlocker_2036_61340362 In Australia and New Zealand, Campbell’s does sell what they call Real Consomme’, which lets you know that what is normally in their cans isn’t.
