What is a Roma tomato and why is it so special?
A Roma tomato looks quite different from the regular shaped tomatoes that you are used to. They are oblong and often have a pointy bottom instead of a relatively flat one. Romas have thick walls, often called meaty and have much less juice than an ordinary tomato. This makes them perfect for sauces and canning as they are not all watery and have to be reduced(water cooked out) for a thick and rich product. Like any other tomato, Romas need to stay at room temperature in order to fully appreciate the flavor. You can use Romas just like any other tomato-even eaten out of hand, they simply do not have that juiciness that slicing tomatoes have.
