Hashbrown Breakfast Casserole ½ Pound Bacon 16 oz package frozen Ore Ida Onion & Pepper Hash browns, thawed (or 2 TBSP each of diced onion and green pepper) 1 ½ Cups Shredded Cheddar 4 Eggs 1 Cup Milk Lightly grease casserole dish. Cook hashbrowns in 350 degree oven for 20 minutes. Cut up bacon and fry. In a bowl beat eggs and milk together. Mix in cheese & bacon. Pour mixture over cooked hashbrowns. Bake another 30 minutes until eggs have set. This feeds about 6 people. Perhaps more since there will be lots of other things there to eat. You can make more if you wish. A few tips is to get everything prepared the night before for assembly/cooking in the a.m. I cooked the bacon the night before and put it in a baggie in the fridge. Put eggs, cheese and milk in a bowl in the fridge and put the Hash browns in the dish I was going to cook them in the night before. First thing in the morning I popped the hash browns in the oven. Then poured the egg mixture over them and cooked for 25-30 min.
