What is a nice meatball recipe??
This is an amazing Spanish meatball recipe. Very different. I’d definitely use the lamb if it’s available. Spanish Meatballs in Almond Sauce Meatballs: 2 oz bread, crust removed 3 tbsp water 1 lb ground lamb (or beef) 1 large onion, finely chopped 1 clove garlic, crushed 2 tbsp chopped flatleaf parsley 1 egg, beaten nutmeg flour 2 tbsp olive oil squeeze of lemon juice salt & pepper Almond Sauce: 2 tbsp olive oil 1 oz bread 4 oz blanched almonds 2 cloves garlic, finely chopped 2/3 cup dry white wine 1 ¾ cup vegetable stock salt & pepper For meatballs: In bowl, soak bread in water for 5 minutes. With hands, squeeze out water and return bread to bowl. Add meat, onion, garlic, parsley and egg. Season with grated nutmeg and salt & pepper. Knead together to form smooth mixture. Spread some flour on a plate. With floured hands, shape into about 30 meatballs, roll each in flour until coated. Heat olive oil in large heavy bottom skillet. if u like spicy: Ingredients For the meatballs 600g/1lb 5oz minced pork 1 medium onion, grated 1 free-range egg, lightly beaten 50g/2oz fresh white breadcrumbs 1 long red chilli, deseeded and finely chopped 2 tsp grated fresh ginger 1 tsp garam masala 2 tbsp chopped fresh coriander pinch sea salt freshly ground black pepper 1 tbsp grapeseed oil For the curry sauce 3 tbsp ready-made massaman curry paste (available in Thai markets and in some supermarkets) 2 tsp grated fresh ginger 4 tomatoes, chopped 200ml/7fl oz coconut milk 200ml/7fl oz chicken stock 1 tbsp lemon juice 2 tsp brown sugar To serve 3-4 tbsp cashew nuts, lightly toasted and finely chopped 2 tbsp chopped fresh coriander steamed basmati rice Method 1.
