What is a good substance to bait a humane mouse trap with?

I have a trap based on gravity it is like a see-saw the mouse enters the tunnel and walks to the opposite end where the bait is – the weight of the mouse in that end of the trap makes that end drop to the ground due to gravity this triggers/shuts the door. I am concerned that the trap may close too slowing but I am finding it hard to find the right food to attact the mouse, I have tried chocolate, biscuit, fruit plus the bait which came with the trap and it looks untouched. I have also put the trap against the walls hidden behind boxes in areas where the mouse roams all with no luck.
