Shredded BBQ Subs (this serves 8 and can easily be doubled. Make another 1/2 recipe sauce, and roast two shoulders instead of one.) Preheat oven to 300 (for 7 hours) or 350 (for four hour cooking time) 1 small onion, finely chopped 1 boneless pork shoulder roast 1 bottle good BBQ sauce 1/2 c. water 1/4 c. honey 4 cloves garlic, minced 1 tsp. seasoned salt 1 tsp. ground ginger or 1 Tbs. minced fresh ginger Place onion and roast in roasting pan with lid. In a small bowl, combine rest of ingredients; pour roast and cover tightly w/ foil, then roaster lid. Roast for time specified above (that’s the nice thing; you can put this on in the morning and it will be ready at dinnertime, basically, or you can cut the time down if you’ll be home.) Let cool, and shred meat with two forks, mixing with sauce. If it seems dry, add a little more bottled bbq sauce. Serve on buns. A great and easy side is a bowl of coleslaw – people can eat it on their sandwiches or on the side.
