By taking out the information you don’t want your ‘new’ organism (because by changing the DNA you will get a new type of organism) to have, like a disease causing gene, and adding new information (genes) to the genetic coding you already have, like different hair/eye colour, which will give you an organism that looks different from the one you started with.
