I love pesto pasta – here’s the recipe for 2 people: Use 750g fresh, mixed vegetables (I use cherry tomatoes, mange tout and asparagus) and enough pasta for 2 people. Cook your pasta first, and then about 5 mins before that’s done, put the vegetables in a boiling hot wok, and add a couple of tablespoons of water so that it turns to steam immediately. THis will steam cook the vegetables. Add salt and ground black pepper at this stage. When the veggies are done, drain any excess water and put them in with the drained pasta, and add 2 tablespoons of green pesto sauce. Mix it in well and serve!

Use whole wheat fettucine. Sautee some chopped mushrooms in olive oil, when they’re almost done add your choice of chopped spinach, red pepper, chopped onion, chopped tomato (or all). Add salt and pepper. Drain pasta and mix into pan. In a small bowl, mix 1 clove chopped garlic, a lot of chopped basil (fresh is best), with olive oil, and salt. Put into pan and mix. If you’d like it won’t hurt to grate some fresh parmesan on top. I just made this for lunch. Yum!
