My brother concocted this pasta with grilled chicken, roasted red peppers and capers. It was really good and he’s a health nut.

You can get really nice pasta sorces from shops or really nice pasta bakes that are really easy to make

Pasta is wonderful and easy to create healthy dishes! First off NO CREAM SAUCE. Tomato sauce or olive oil is great. I LOVE to grill or saute chicken breast, saute my fave veggies, stir both into some angel hair with some olive oil and some Good Seasons Italian seasoning. SO GOOD!

Greek Penne and Chicken Ingredients: 1 (16 ounce) package penne pasta 1 1/2 tablespoons butter 1/2 cup chopped red onion 2 cloves garlic, minced 1 pound boneless chicken breasts, cut into bite-sized pieces 1 (14 ounce) can artichoke hearts in water 1 tomato, chopped 1/2 cup crumbled feta cheese 3 tablespoons chopped fresh parsley 2 tablespoons lemon juice 1 teaspoon dried oregano Salt to taste Ground black pepper to taste In a large pot with boiling salted water cook penne pasta until al dente. Drain. Meanwhile, in a large skillet over medium-high heat melt butter, add onion and garlic and cook for 2 minutes. Add chopped chicken and continue cooking, stirring occasionally until golden brown, about 5 to 6 minutes. Reduce heat to medium- low. Drain and chop artichoke hearts and add them, chopped tomato, feta cheese, fresh parsley, lemon juice, dried oregano, and drained penne pasta to the large skillet. Cook until heated through, about 2 to 3 minutes. Season with salt and ground black pe

My fav which is pretty low fat except for the olive oil… Cook up some spagehetti until ready. Drain and save some of the cooking water. Pan fry 1 chopped clove of garlic in olive oil, add 2 or 3 large chopped tomatoes and some chopped chilli (can use fresh or dried flakes). Turn heat down add some of the water you cooked the pasta in and cook until the tomatoes turn mushy and you end up with a nice thickish sauce. Add salt and pepper and then toss in the cooked spagehetti. Add some herbs if you like. For an extra treat, you can add some chorizo at the stage when cooking the garlic.
