What foods are used at the Jewish Holiday, the Passover?

I think the better asked question here would be ‘What foods are NOT used on Passover?” Ok, basically we do not eat any leavened food. We call this foods ‘chometz’. Included in this category would be things such as cake, bread and other foods with yeast in them. At the Passover ‘seder’ (meal) there are however certain foods which we eat that symbolise different things from when the Jewish people were slaves in Egypt. They are: Maror – bitter herbs (horse radish). A chiken neck (we don’t actually eat it, but it remains on our plate) Charoses which is a mixture of crushed nuts, apples and wine. A hard boiled egg. And a piece of vegetable such as a potato, onion, celery. We also eat what is called Matzah. Matzha is unleavened bread which is hard like crackers.
