This depends on how ancient.  At one time the cultures of India were nomadic and ate many similar things to Native Americans.  Diets consisted mainly of items easily begot from nature such as fish, wild game, nuts, berries, and rice.  

 

As time moved on, stationary crops were maintained in the river valleys.  The main staples were rice, wheat for bread (Chapatti-a flat bread),  lentils, vegetables, and varieties of meat.  Slowly, vegetarianism has become more common, since the cow has become sacred in the region.Some of the spices unique to Indian cooking, which give it the distinct flavor, are  chili’s, pepper, curry, turmeric, and tur daal.
