(updated 21Oct2009) Food facilities that process livestock into meat, poultry; aquaculture ponds; and also eggs are all regulated by USDA FSIS. Some states also manage their own inspection programs for product that will not be moved across state lines (however new administrative rules may change this). In addition, very small plants that process only for the owner of the livestock are classified as exempt.
