During my A-levels I did an enzyme experiment using catalase from potatoes. It’s a pretty simple design, you mush up some potatoes, add some hydrogen peroxide, then measure the oxygen produced, either by counting oxygen bubbles/rate of bubble production, or by capturing the oxygen. You can then vary the factors such as temperature by keeping the apparatus in a water bath, or by altering the amount of potato mush or hydrogen peroxide you start with. pH is possible but a bit more of a nightmare to measure. Keep it as simple as possible to aid you in your write up!
