What exactly does the Knight Ring do?
The Knight Ring treats the person who equips it as a mounted unit, meaning that they have freedom of movement once they have expended their attack or item trade options. Note, however, that they are not granted extra Movement or Range, but they are allowed to move twice, meaning that a 5 Movement unit can still only move 5 spaces, but that unit can now move once, up to 4 spaces, and then move again, using the remaining Movement (if you move 4, then 1 is remaining).
