What exactly are “dragees” and what happens in the coating process?
In large rotating coating tanks made from copper or stainless steel the coating mass (chocolate, sugar, etc) is constantly drizzled onto the core (nuts, biscuits, rum-corpus… ) and thereby coated. This is the reason for the most dragee products having a smooth, round surface. Chocolate buttons coated in sugar, peanuts coated in caramelised sugar, such as Casali Aschanti, but also with nuts coated with count as dragees.
