Searching around the Internet for a bit reveals that there are quite a few answers to this interesting question, and not really a single ‘official’ answer.Probably the most technical sounding answer is that the Wii stands for wireless inter-interface. This is referring to the Wii remote, which is really a super-gadget in itself, having both an accelerometer and optical sensing capabilities.
