What does the word “wheat” mean on a label?
Bread labeled simply as “wheat” bread usually contains a mixture of about 75 percent enriched white flour and 25 percent whole wheat flour, and is therefore NOT considered a “whole grain” food. Look for the words “100% whole wheat” or “whole wheat” in the list of ingredients. Also, since ingredients are listed in volume order, the closer “whole wheat” is to the top of the list, the better.
