What does the plan of study approval process entail?

This is not something you have to tackle alone! It is done in consultation with your advisor. First, you prepare answers to a series of questions about your goals and plans, and email them to your advisor. S/he will provide feedback and suggestions for changes that need to be made. Usually, after two or three revisions, you will be ready to present your plan of study to the Interdisciplinary Studies Advisory Committee. This committee meets once per semester; the members are given copies of plans of study a week ahead of the meeting. On the day you are scheduled to present, you will go before the committee for 10-15 minutes, answer questions about your plan of study, and then hear whether or not you are approved. If you work carefully with your advisor in developing the answers to the plan of study questions, the approval process should go very smoothly for you.
