Experts in the photo industry still wonder about that and discuss it on message boards. I have not been able to ask personnel at Canon, but the best guess that I have seen is that it stands for “Electro-Optical System”, because the communication between camera and lenses is completely electronic, rather than electronic with some mechanical linkages.
