What does “cacao” (e.g. 41% or 72%) mean?
Technically, “% cacao” refers to the amount, as a percentage of the total, of cacao bean plus cocoa butter in chocolate. In a semi-sweet or bittersweet chocolate, the remainder is almost all sugar (there is a small amount of vanilla and lecithin). In milk chocolate, the remainder will include milk or milk solids along with some added cocoa butter.
