What does aging mean?
Here at Chicago Steak Company, we use an aging process referred to as “wet aging”. This process allows the meat to naturally age, in a controlled environment, for 28 days while sealed in a Cryovac package. During these 28 days, the meat marinates in its own juices making the steak flavorful and tender. To learn more about our 28 day aging process check out Aged to Perfection.
