A Meat Processing (Smallgoods) (Level 3) trainee is involved in: • learning a variety of skills needed to operate machines and prepare foods • using a wide range of equipment and methods • making fresh and cooked smallgoods and may prepare seasonings and cures according to recipes • production and final processing of a wide range of continental, fresh and cooked smallgoods using hand skills and machinery.
