Get yourself a good cable release (or a wireless release) and set the camera to “bulb” and you are good to go. The big problem is sensor noise, on long exposures. I use a Canon Digital Rebel, and I’ve taken 30 and 60 second exposures, but never 3-5 minute ones. I would definitely suggest reading forums like www.dpreview.com, to see people’s experience with different cameras for really long exposures.
