What CAN’T you put in an omelette would easier to answer. Cheese and basil would most definitely be good. If you have a potato then shred it up and fry it like a hashbrown patty and put THAT in your omelet. (Matter of fact, I just had a hashbrown and cheese omelet for lunch). Some other good combos: green onion (or chive) and cheese radish and tomato (YES! Radishes! slice em thin!) Spinach and bacon bits (or BACOs) with a little parmesan Boiled spaghetti noodles with a little parmesan or cheddar Finely chopped dill and parsley with some mushrooms Chopped broccoli and tomato with cheese Leftover meat of ANY kind Corn and Black beans (top with some salsa) Good luck!
