What can I make with two red bell peppers as a side dish with dinner tonight?
This is one of my favorite side dishes: Peel, seed, and cube your butternut squash and place it in a large baking dish. Cut your red peppers into either strips or cubes and add to butternut squash. Drizzle with olive oil, sea salt, black pepper, and granulated garlic and toss to coat. Sprinkle liberally with either feta or a crumbly goat’s milk cheese. Bake at 400 degrees until slightly brown and golden, but tender. (about 1 hour). You can make this ahead of time and reheat in the microwave. The squash has to be roasted in the oven, though, or the flavor won’t be quite as intense. If you already have a recipe in mind for your butternut squash: simply slice your red peppers and saute in olive oil with sea salt. Add other vegetables if you like, like sliced onions, halved mushrooms, sliced green peppers, sliced zucchini or yellow crookneck.
