Anon_guy, after making juice I like to add the pulp to muffins, oatmeal cookies, or quick breads to give them a fiber and color boost. It is hard to give an exact recipe because each pulp has varying amounts of moisture in it. Usually 1/4 cup of pulp is all you’ll want to add to your favorite recipe and compensate by adding a little more flour or a little more liquid if needed. Here is a recipe I use replacing the grated veggies and chopped nuts with the pulp: Try this: MOSAIC MUFFINS (makes 12 regular sized muffins) 1 tablespoon ground flax seed 3 tablespoons water 1 3/4 cups sifted flour 1/3 cup sugar 2 1/2 teaspoons baking powder * 1/4 cup vegetable pulp * 1/4 cup nut pulp 1 teaspoon salt 1 teaspoon ground cinnamon 3/4 cup non-dairy milk or apple juice 1/2 cup vegetable oil 1 tablespoon white vinegar 1 teaspoon vanilla Preheat oven to 400 degrees.
