What can cause flavor changes in frozen corn-on-the-cob?
Blanching times for corn-on-the-cob are longer than for cut corn in order to destroy enzymes in the cob. If the cob is not heated enough to destroy these enzymes, they can cause undesirable flavor changes in the corn kernels during freezer storage. When freezing corn-on-the-cob, sort ears according to size. Blanch small ears 7 minutes, medium ears 9 minutes, and large ears 11 minutes.
