When thinking about veal chop recipes, the fact that they are actually beef isn’t the first thing that comes to mind. Veal is a by-product of the dairy industry. Female calves are raised for dairy products and only a few of the males are used for breeding. The males not sent to breeding farms are used for their meat, otherwise known as veal. The chops are the most tender cuts, and come from the loin and rib of the animal. Veal has a somewhat upscale image. This high-end notion may be the reason it doesn’t readily grace our dinner tables.
