Ultracapacitors are made with different technologies, some are organic electrolytes in a porous carbon electrode, I believe. But those are not suitable for EVs, yet. There are a few claims that the next generation of caps will have sufficient energy density to be used in automotive applications, but I have to see credible confirmation of those claims, yet. But your general notion is right on, the answer is in “something else”. We just don’t have that something else, yet.
