What are traditional meals of Bulgarian Rhodopian cuisine?
A14: One of the irresistible temptations of the Rhodopes is the wonderful cuisine. Known for their hospitality, Rhodopeans will welcome you to their homes as dearest guests and will serve you delicious specialties. Many of the recipes have come down to us through the ages carefully preserved in the years and enriched by modern generations. The Katmi or Morudnitsi are one of the favorite local specialties, prepared from thin batter, yogurt and eggs. Another popular dish is the ‘kachamak’. Boiled corn ‘kachamak’ is served in two ways: in ‘balls’ or in a large baking tin, with melted butter poured and fried meat/bacon, cheese or curds on top. One must try the favorite dish of Rhodopeans – ‘patatnik’. It is made of grated potatoes, eggs, onions and spices, and is baked in a frying pan.
