What are the ways of cooking dim sum (dim sims)?
There are many types of dim sum, and while perhaps the most common types of dumplings, like Har gow and Shu mai are steamed, there are many other cooking techniques employed for other dim sum dishes. Tripe and rice porridge are boiled. Sweet bean or custard buns are baked. Roasted duck, chicken and pork are often served. Chicken feet are usually braised. Turnip cakes are boiled, cooled, sliced, then fried. A number of dumpling types are deep fried. Steaming is popular in part because it is very efficient. Tall stacks of steamer trays can all be cooked at once, and little water is wasted.
