What are the vegetables in vegetable oil?

Carol W., Huntington Beach, CA I loved that question ! How about I say none! What is meant by “vegetable oil” is an oil derived from a mixture of plants as opposed to a specific oil derived from a specific plant such as corn, peanut, sesame or olive. When a recipe calls for a “vegetable” oil it calls for an oil which is non-specific, but most important, an oil which is neutral in flavor. If you have a neutral flavored oil at home such as safflower or cottonseed then substitute that for a “vegetable” oil rather than go out and buy another bottle of oil.
