Firstly, it depends on the strain of salmonella involved. There is one strain of salmonella out there that can cause an arthritis-like disease and this may not be discovered for 2 years. However, in most of the food-borne illness cases reported, the salmonella strain involved results in accute symptoms such as diarrhea and vomitting that usually lasts for 1-3 days. In a larger dosage of salmonella, the symptoms would probably be more accute and may last for several days longer (up to a week?). The main issue with salmonella food-poisoning is the uptake of fluids (as it is hard to retain adequate fluids whilst throwing up etc.) some people (usually the elderly or young) require hospitalisation for rehydration.
