What are the signs of a fresh egg?
If it’s in the shell, try placing it in a glass of water. If the egg is very nearly balanced on its side, then it is a very fresh egg. If the large end starts to point upwards, then it is getting a little age on it. If the large end is bobbing straight up, it’s a pretty old egg. It’s because there is an air pocket in the large end and it will continue to get larger as it dries out and stays in one position, like in an egg carton. To tell freshness in an egg out of it’s shell, a fresh egg is very perky and the yolk stands very high and upright. The white doesn’t flow all over, either. It doesn’t break easily, either.
