The American Spice Trade Association (ASTA) Method 21.3 is the official method for determining OC pungency that is recognized by Health Canada. This method claims that capsaicinoids such as capsaicin are the only true indicators of OC pungency. Scoville Heat Units are an inaccurate and outdated method.
