You would have to know your product and its pH and water activity. Also know your GMPs (21 CFR 110) and the labeling requirements (21 CFR 101). In fact, you should persue all of Title 21 of the Code of Federal Regulations as it pertains to food. You will have local and state laws to follow, too. Check with them.
