What are the proper steps to chill or cool the finished products?
* Coating should be cooled at a temperature of about 45-50ºF for 15-20 minutes. In our lab, we cool molds in the freezer for 3-5 minutes and then put them in the refrigerator for 10-15 minutes until they are set. * If using a cooling tunnel, the entrance and exit of the tunnels should be 5-10 degrees warmer than the middle of the tunnel to avoid big temperature differentials and reduce the chance of condensation forming. Ideally, the middle of the tunnel should be about 45-50ºF and the entrance and exit should be about 50-55ºF.
