What are the origins and history of the famous white cheese dip served at Mexican restaurants?

This white cheese dip is a true Mexican recipe. It is not Tex-Mex. But that doesn’t mean people won’t call it a Tex-Mex recipe. In fact, many people do. And they call it many other things besides. The white cheese or queso blanco the main ingredient is originated in Spain and spread to Mexico and other American countries. The name queso blanco is Spanish for “white cheese”, but similar cheeses are used and known throughout the world by different names. I don’t know why so people who claimed they have gone to a Mexican Restaurant or have Mexican relative and they never heard of White Cheese Dip. I really don’t understand it.
