The probiotics used in yogurt are micro-organisms that produce lactic acid, such as Lactobacilli, some Streptococci and Bifidobacteria. Lactobacillus L. casei L. rhamnosus L. acidophilus L. plantarum Bifidobacterium B. longum B. breve B. bifidum Some yeasts have also been shown to have beneficial effects on health. The most well-known are Saccharomyces S. cerevisiae boulardii.
