For smell there is a small patch of cells at the top of your nasal cavity called the cribiform plate that is attuned to substances in the air that we perceive as smell. For taste, go with taste buds on the tongue. For touch there are a number of receptors in your skin (skin being the best general answer to your question) that are capable of relaying information about heat, cold, pressure, pain, and in some instances itch and tickle are included. Collectively these are referred to as somatic senses.
