What are the main difference between Japanese green tea and other types of tea?
There are basically three different categories of teas: fermented, semi-fermented, and unfermented. Japanese green tea falls into unfermented category. To name some well-known types of tea, black tea is fully fermented and oolong tea is semi-fermented. Generally, fermented teas are more aromatic while unfermented are more tasteful. Plus, unfermented teas contain more antioxidant substance known as catehine.
