I would guess that the recipe varies by geography, but this seems to be the basic ingredients. For the stew: 2 1/2 pounds Honeycomb tripe 2 tbsp. Mexican Oregano 1 clove garlic 2 bay leaves 1 tbsp. salt For the Posole 2 pork country ribs 3 lbs pigs feet 2 16 oz. cans White Hominy, drained 3 or 4 Chilis de Arbol For the Chili 4 dried Ancho chiles For the Menudo Mix (spices) 2 tbsp. red pepper flakes (with the seeds) 2 tbsp. dried Mexican oregano Optional Lime Tortillas – corn Diced White or Green Onion Minced Cilantro Enjoy..!
