Indian cuisine is distinguished by the wide variety of ingredients used in many dishes. One of the basics of a curry is the spice mix, called “garam masala”. Masala means a combination of spices. Garam translates literally as hot! This spice mix varies with each recipe, thereby imparting a distinctive flavor to each dish. Some of the standard spices used in most mixes are turmeric, clove, cardamom, cinnamon, fennel, etc., often in combination with other powdered spices. Sometimes, dried herbs are used in this mix these tend to be coriander leaves or curry leaves. The curry leaf is a must for any Indian cook as it imparts a distinctive flavor. The spice mix is 100% pure and does not contain MSG, wheat or corn flour or any other such additive to add bulk, flavor or color.
