All enzymes work on a specific PH level therefore, change in the PH has several effects on the structure and the activity of the enzymes. Basically the change in the PH value may change the charging properties or the shape of the enzyme which reduces the binding ability of the substrate. As a result the substrate does not undergo the reaction of catalysis. All enzyme function at optimum PH and it is not same for all levels of enzymes. In simpler words, the activity of the enzyme is completely stopped or reduced because of the change in the level of PH.
